Ideas For Your Super Bowl Menu

hawaiian roll sliders

 

INGREDIENTS FOR CARaMELIZED ONIONS

2 tbsp extra-virgin olive oil
1 large onion, halved and sliced
Kosher salt

ingredients for butter topping

4 tbsp butter, melted
1 tbsp poppy seeds
2 cloves minced garlic
1/2 tsp Worcestershire sauce

ingredients for sliders

12 Hawaiian rolls
1/4 c mayonnaise
1/4 c honey mustard
2 lb sliced deli ham
1 lb sliced Swiss Cheese

directions

1. Make caramelized onions by heating oil in a large skillet over medium. Add onions and salt and reduce heat. Occasionally stir for roughly 25 minutes or until onions are caramelized.
2. Preheat oven to 350 degrees. In a medium bowl, combine butter, poppy seeds, garlic and Worcestershire.
3. Split rolls in half horizontally and place bottoms on baking sheet. Spread bottom half with mayo and top with ham and Swiss. Add honey mustard and onions on top and close sandwiches. Spread butter poppy seed dressing on top bun. 
4. Bake until cheese melts, roughly 10 minutes.

ingredients

16 cipollini onions
1 c buttermilk
1 c all purpose flour
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp salt
1/2 tsp dry mustard
1/2 tsp black pepper
peanut or vegetable oil

directions

1. Fill large pot with 2.5 in of oil and preheat to 350. 
2. Cut off 1/8 inches from onion stem and peel.
3. Make a cross-cut through onion leaving bottom stem in tact. Continue cross-cutting until you have 12 evenly spaced cuts on each onion.
4. Turn onions over and gently separate outer layers.
5. Pour buttermilk into bowl and set aside.
6. Place remaining ingredients into another mixing bowl and mix together well.
7. Dip each onion into buttermilk then dredge into flour mixture. Repeat until onions are double coated.
8. Drop onions into the hot oil, cut-side down, for 3 to 4 minutes. Flip and dry until each onion is crisp and golden brown.
9. Place onions on paper towel and season with salt and pepper. Serve with buttermilk ranch dipping sauce.

homemade queso

 

ingredients

2 tbsp extra-virgin olive oil
1 small onion, chopped
3 cloves garlic, minced
1 minced jalapeno
12 oz American cheese, shredded
4 oz Pepper, Jack shredded
1 c milk
Kosher salt
Freshly ground black pepper
1 medium tomato, diced
4 oz green chilis
1/4 c chopped cilantro
Tortilla chips

directions

1. Heat oil in large skillet over medium. Add onion and cook for 5 minutes. Add garlic and jalapeno. Add cheeses and milk then stir until cheese is melted. Season with salt and pepper. Stir in tomatoes, green chilis, and cilantro.
2. Serve with chips.

 

pulled pork nachos

 

ingredients for pulled pork

2 lb pork shoulder
1/4 c brown sugar
1 tbsp chili powder
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
1 tsp Kosher salt
1 tsp black pepper
1 medium red onion, quartered
1/4 cup ketchup
1/4 cup mustard

ingredients for toppings

tortilla chips
red onion
BBQ sauce
1 c shredded cheddar cheese
1 c shredded monterey jack cheese
diced tomato
sour cream
salsa
fresh cilantro

directions

1. Place Pork, onion, and seasonings into 6-quart slow cooker. Mix to coat meat in seasonings.
2. Add ketchup and mustard. Spread evenly over meat.
3. Set slow cooker to High and cook for 4 hours, or 8 hours on Low.
4. Remove meat from slow cooker and shred into bite-sized pieces.
5. Preheat oven to 400 degrees.
6. Assemble nachos layer by layer: chips, pork, onion, BBQ sauce, and cheese. Repeat as desired.
7. Bake for 8-10 minutes.
8. Top with sour cream, salsa, and cilantro.
